I'm in the process of trying that. The downside is that nothing ZFS is
available on the Debian installer by default (licenses and such; i
assume you can add it as a module or something, by tweaking it). Since
i'm not into that i'm using 2 disks with RAID1+LVM for / and the other
2 will have something ZFS.

Also this is seems to be a good overview on ZFS (albeit maybe a bit
dated): https://pthree.org/2012/04/17/install-zfs-on-debian-gnulinux/

This may be irrelevant to even mention, but most stuff i find on The
Net is usually outdated by a few years, so i always try to check a)
when was it written and b) by who and what's their authority on the
matter  (subjective). Plus, it seems to me ZFS is not that well-known
to linux folk (i included) so there may be a little chest-thumping
going on since ZFS is mostly a Solaris thing (as is dtrace...). Dunno
