If the image was the one downloaded from openmirage.org, then it was built using these scripts: https://github.com/mirage/xen-arm-builder If you want to change the kernel config and rebuild it then you should be able to just do the kernel step manually without rebuilding the whole image. If you are using that image though, you'll probably find it more interesting to use Xen rather than Unix+tuntap.
