*facepalm* Ok, sorry, this was caused by a two-character typo:

["ocaml" "setup.ml" "-configure" "--prefix" "${prefix}/x86_64-rumprun-netbsd" 
"--disable-syntax"]

should have been

["ocaml" "setup.ml" "-configure" "--prefix" "%{prefix}%/x86_64-rumprun-netbsd" 
"--disable-syntax"]

Still, "Stack overflow" is not a terribly descriptive error :-)
