No, unfortunately there is no documentation yet. However, booting the image 
with qemu is straightforward.
Simply create two dummy files, 32MB each: flash1 and flash2, to simulate the 
on-board flash of the Mainstone platform.

Then you start qemu with:

qemu-system-arm -s -localtime -M mainstone -kernel 
xen-pxa270-qemu/xen/arch/arm/boot/uImage -pflash flash1 -pflash flash2 -S -m 
256 -serial vc:1000x500

provided that the xen-pxa270-qemu source tree is on the working directory.

Yes, it is fully bound to the final image. The XEN hypervisor is actually the 
first component which is booting at the very beginning.
