This system is configured for no node local memory. Therefore all the memory is listed in proximity domain 16. This is a special node used to represent memory interleaved from the other nodes. The processors are on nodes 2 and 9, which you can see is reflected in the lsapic eid value. Decode below. I'm a little concerned that changing ACPI static tables may end up breaking references that exist in ACPI namespace. Is that just my own paranoia?
