I'm by no means a Xen expert but I would look at a couple of areas.  I
believe there is a statement in the domain configuration file regarding
the number of NICs in the domU.  It defaults to one.  Have you set it to
three?

I'm not sure but I think the device does need to be brought up in dom0
even if no IP address is bound to it.  Has it been brought up and the
bridges created? Again, I'm not sure about that but I think I recall
having to bring the physical device up (ifconfig eth? up), create the
bridge and add it to the bridge before I could successfully use it in a
domU.  Hope this helps - John
