The gcc mcpu / mtune options only define which instruction set is available, 
and give hints on how to order intructions for speed. Since xen doesn't 
emulate the cpu, but just "shares" the real one between multiple domains, you 
can use all cpu-specific optimization options.
(I'm running several domains with -march=nocona, for example)

Only exception would be the -mno-tls-direct-segrefs option, which should be 
enabled in all domains, but I think the gentoo-xen-howto covers that.
