The printer, as it seems, is recognized:

printserver:~# lsusb
Bus 001 Device 002: ID 04b8:0005 Seiko Epson Corp. Stylus Printer
Bus 001 Device 001: ID 0000:0000

Does this printer work in native Linux, without Xen?

Since lsusb detects it, Xen passes the USB device properly to domU,
and Xen seems to have nothing to do with your problem.
I think you should seek help in cups list...
