I'd say your best bet is to start the domain in question, make sure you
either use virt-manager or have a VNC client ready to connect to it, and
as soon as the VM starts, in the VNC client you'll need to hit F8 (or
use the VNC client's menu to send F8 depending on the client) and select
 Safe Mode or VGA Mode.  You should be able to be into Windows now and
change the resolution.  As an alternative, you could try setting
stdvga=1 in the domain's config file, this may force Windows to drop
back to 640x480 or 800x600 (as it's a different display driver), but I'm
not entirely sure.  Your best bet would be the first suggestion I think.
