Depends on your distro - there are lots of versions of kernel available - debian had a 2.6.20 available in etch for a while that works fine (it's in the archives although not 'live' any more for some reason). Redhat seems to have 2.6.21 versions around and I've even come across 2.6.22 prerelease versions.

Compiling your own seems to be best avoided since there's no official 'xen patch' you can apply for each kernel that I can find.
