RedHat only ships PAE Xen and PAE guest kernels, so you shouldn't have an 
issue.

For a domU that'll work fine.

Are you talking about upgrading the domU's kernel to the one shipped with Xen 
3.1?  I don't really think there'd be any point in that.  In general, it'll 
work just as well to stick with the RHEL XenLinux, and then you'll be closer 
to RedHat's default configuration.
