Well you have:

root    = '/dev/sda1 ro'
disk = [ 'file:/home/xen/domains/mailserver/disk.img,hdg1,w', 'file:/home/xen/domains/mailserver/swap.img,hdg4,w' ]

That doesn't make sense.

Just leave the lines at the ones created by xen-create-image - don't muck around with it until you have it working.
