The guests will by default use a bridge connection and dhcp by default assuming they are configured as such.

If that is not happening, make sure are using the network-bridge script in your xend-config.sxp, you can also explicitly tell the guest to use dhcp in the config file by setting the dhcp parameter to dhcp (dhcp="dhcp") explicitly.
