This is odd. Why would a domU need MPT driver?

  
However, an update: I just tried booting it in to different run-levels using
the 'extra' command in the config file, and it will boot in to run-level 1
but nothing higher. Still nothing in the log files or anything though.
    

Can you post the lines of domU's /etc/inittab which has "tty" on it?
You need to have something like this

co:2345:respawn:/sbin/agetty xvc0 9600 vt100-nav
