Although you can (at least on Linux) mix-and-match dom0 kernel, the hypervisor is tightly connected to userland programs (xend, xm, etc.). Having two hypervisors is easy, but having both version of userland programs is hard since (by default) it's installed in the same location with the same name. Since you can't activate both at the same time anyway, my suggestion is to have separate root partition/LV for each version.
