Take a look at various /etc/xen/xmexample*

For simple HVM guest, I use this (x86_64 domU)

device_model = '/usr/lib64/xen/bin/qemu-dm'
kernel = "/usr/lib/xen/boot/hvmloader"
builder='hvm'
sdl=0
vnc=1
acpi=1
boot="dc"
usbdevice='tablet'

I use these instead (pygrub-booted PV with vnc vfb)

bootloader="/usr/bin/pygrub"
vfb =['type=vnc']

CPU, memory, disk, and NIC definition is the same for HVM and PV.
