Read the last part of this http://wiki.xensource.com/xenwiki/XenDom0Kernels you might encounter stability issues with the debian xen kernel packages. You might be lucky and not have them but it's not for sure.

About your issue not sure, till now I have only used packages and encountered problems on the production machine while on the tesing machine it worked perfectly.
