If by "lvm-based VMs" you mean "domU's disk is stored as LV on dom0",
then you simply need a free disk/partition, add it to a VG, create
some LVs, then use it for domU. dom0's filesystem does not need to be
on LVM.

If by "lvm-based VMs" you mean "you will use LVM inside domU, but
domU's disk is stored as files on dom0", then it has nothing to do
with wether or not you have LVM on dom0.
