...and it stays in this "Loading..." and never goes ahead, no matter we use the 
cdrom or an iso image.

We are considering the usage of other distros and the update of the system.

So you're able to run both 32b and 64b hvm (fully virtualized) guests,
and also 32b pae and 64b PV (paravirtualized) guests.

Do you see anything on the HVM guest graphical console?
Xen in RHEL5 is getting old.. especially for recent HVM guests.

You might want to try the external/3rdparty Xen 3.4.2 rpms for EL5
from http://gitco.de/repo/
