Thank you, I'd missed that.
I've done some changes (like disabling balooning on dom0 and giving it a
major weight in order to make sure it gets enough CPU while performing I/O 
tasks) but nothing have changed at all.

Please, take a look at my previous report. Another pair of eyes could be
helpful.
