Remember that the 10.04 ubuntu netboot installer is now Xen aware, and can be run paravirtualised.

       I followed the steps described at http://community.citrix.com/display/ocb/2008/07/02/Installing+Ubuntu+on+XenServer. Although they are for XenServer 4.1 and Ubuntu 8.04, they worked for me with XCP (and XenServer 5.5) and Ubuntu 10.04. Then I created a templated for it.
