Last time I tried, simply use standard Lucid net installer:
http://cdimage.ubuntu.com/netboot/lucid/
You only need to download the kernel and initrd, and map it as
"kernel" and "ramdisk" on PV domU config file.

I see that there's still a "xen" section there (with an example config
file) as well, but I haven't tested those.
