You can't specify that for an HVM guest from a xen cfgfile.
You need to check it from inside the HVM guest, like this:

cat /sys/devices/system/clocksource/clocksource0/current_clocksource
cat /sys/devices/system/clocksource/clocksource0/available_clocksource

Please paste the output of those.
