XCP also includes a toolstack for managing XCP pools.  You can build a cloud
with Xen+CentOS instead of using XCP, but it is easier to do with XCP.

So it is really no different from me installing a minimal CentOS and the
adding Xen on top of that? 

So the only thing XCP is offering me is an easy install?
