See above, uname -a shows that I'm indeed running the Xen kernel.

uname -a doesn't say if you are booting the with the Hypervisor.

There is a distinct difference between running just the *-xen kernel and actually running the correct grub entry with the extra Xen 4.0 entry.

Add the following to /etc/default/grub and then let the boot process select the correct entry:

GRUB_DEFAULT='Debian GNU/Linux, with Linux 2.6.32-5-xen-amd64 and XEN
4.0-amd64'
