From the wiki (http://wiki.xensource.com/xenwiki/XenStore):
"XenStore is an information storage space shared between domains."

So I think of 'Store' as in 'Storage', or as you said a repository. Store as in 
AppStore implies
you could purchase something, which is not the case here.
