Does http://xenbits.xenproject.org/docs/unstable/misc/efi.html help?

You either need to launch xen.efi directly from EFI (without grub) or
use grub's chainload functionality and not the normal multiboot stuff
(dev work is ongoing to make the multiboot case work on both the Xen and
grub side)
