Run top and see what's in use (and for what - ie buffers, cached, etc), adjust, 
rinse and repeat.
Bear in mind that some memory use (eg buffer sizes) depends on the amount of 
ram given to the kernel at boot time - so adjusting the memory allocation will 
affect usage, hence the "adjust, rinse and repeat" bit.

Oh to have that much spare memory !
Mine run with 512M which seems to be adequate.
