There's preliminary IA-64 support in xen/arch/ia64. I'm not sure if any patches to the Linux kernel are required to run on top of Xen/IA-64 but they don't appear to be in the tree. Last I heard, Xen/IA-64 can boot a single dom0 kernel successfully.
