It shouldn't be Xen-specific but it *is* non-PAE specific.  i.e. Vanilla Linux 
can support PAE to access all of your memory.  Xen 2.0 doesn't support PAE so 
it won't work.  On Xen 3.0 you'll probably see all of it.
