I removed splash and quite. I didn't find any difference. The boot process looks frozen on the serial console anyway. I looked into /var/log/messages, but didn't find anything helpful. I am attaching a log file if you would like to have a look at it.

splash and quiet are going to supress all of the Linux boot messages
(and splash isn't going to work under Xen).  You should remove both.

You should see xend output though.  Try removing the console=vga part in
the kernel line and see if that narrows it down.
