While I'm not sure on how to write the xend config. I've 3 bridges on my
xen server. xenbr0 and xenbr1 are configured using the system config
file (/etc/network/interfaces, it's debian 3.1) and xenbr2 via
xend-config.sxp:

(network-script 'network-bridge bridge=xenbr2 netdev=eth0')

in my domU's I do:

vif = [ 'mac=fe:fd:xx:xx:xx:xx, bridge=xenbr2',
        'mac=fe:fd:xx:xx:xx:xx, bridge=xenbr0',
        'mac=fe:fd:xx:xx:xx:xx, bridge=xenbr1' ]

to configure the interfaces.
