I figured this one out:

Compiling CONFIG_BLK_DEV_SD statically into the domU kernel makes Xen
not able to find virtual disks. Is this a bug?

Looks like my networking problem is a known bug:

Running "ethtool -K eth0 tx off" inside a domU will make the network
work just fine.
