I also like Xen on Debian for all of the reasons listed above: easy
minimal install, good packages, etc.

I also have Xen running on Fedora and it has worked well, but it is
more difficult to get a minimal install and their some other issues
that make me prefer debian.  I'm working on CentOS now so we'll see
how that goes.
