I had troubles with this combination too. linux-Xen0-2.6.16-1.2111 with
xen-3.0.0. Try kernel linux-xen0-2.6.16-1.2096 (or 2054 which comes on
ISO).

Perhaps linux-Xen0-2.6.16-1.2111 will work with xen-3.0.2?
