The last time I did this was with Xen 2, and the default domU kernel didn't have support for NFS ROOT. I had to download the source code and recompile the domU kernel enabling it and a few other options I can't remember. :) If you fail, let me know and I'll look where did I put the tutorial I once wrote for this.
