Even if you only run Linux DomUs, if the cost difference between a HVM-capable vs a non-HVM CPU is small enough, I'd go with the HVM-capable CPU. You know, just in case things change 2 years from now and you need the HVM capabilities for some odd corner case.

But then I believe in hedging bets whenever possible.
