I am using sid/unstable, which is IMHO stable enough for my linux desktop,
it runs for years.
I did 
apt-get install linux-image-2.6.18-1-xen-686 linux-modules-2.6.18-1-xen-686 
xen-utils-common xen-hypervisor-3.0.0-rc1-i386 xen-ioemu-3.0.3-rc1 
xen-utils-3.0.3-rc1 libc6-xen
Although the mashine is a 64-bit, I prefered to use 32-bit libraries, so 
firefox can use flash, java mplayer ...
aufter dist-upgrade last sunday it worked

my config for the hvm is attached.

I use the whole disk which contains linux and winxp in separate partitions. 
Winxp was installed without xen.
