Latest version of virt-install can automatically extract a Xen kernel/initrd from ISO images / CDROM device for Fedora / RHEL / CentOS, and will try and generate a kenrel/initrd for Xen with SLES distros (SLES doesn't provide pre-built initrds for Xen in install trees). Still normally need to install from some form of network source unless your distro is small enough to fit on a single CD.
