I think you should also check /etc/sysconfig/kernel and make sure that
DEFAULTKERNEL=kernel-xen

Or better yet, for PV domains, you should also remove ALL kernel and
kernel-devel packages (i.e. normal linux kernels, since PV domains can't
use them anyway) and make sure you only have xen kernels for domU. This
will make sure that a system update (pup/pirut, yum update) does not
mess up your system again, plus it also saves some space.
