I installed Xen 3.1.0 from the sources and I compiled the xen0 kernel
with the commands:

make clean

When I boot the server choosing the "2.6.18-xen0" kernel I get this error:

And the server doesn't boot. If I boot with the "2.6.18-xen" kernel
created with the "make world" and "make install" commands I have no
problems.

What's the problem?

The kernel doesn't find the root file system.
Is your root file system on NFS?
Do you specify it on the kernel's command line?

Generally I'd start by comparing the kernel command line parameters in grub's menu.lst

Also - the mentioning of "update-grub" makes me suspect that this is a Debian system, if so then I'd recommend using kernel-package to build a "proper" debian package for the kernel.
