Always remembering that my setup isn't yet working, so my advice should be
viewed with a bit of healthy skepticism -- I do believe I've succeeded in
creating additional bridges.  And it was very simple.

To create my xenbr0, all I did was put:
    vif = [ "mac=00:16:3e:44:fb:8c,bridge=xenbr0" ]
into /etc/xen/vl01 (where vl01 is one of my domain config files).  For
multiple ethernet interfaces in the guest, you just need multiple entries
in the brackets (same as for disks, for example).
