I have more than 20 Zimbras running on Ubuntu 8.04 (dom0 / domU - 32 and 64 bits)...

Most likely a bug on etch's kernel.
For production purposes I suggest stick with vendor-supported distro
(I have a Zimbra installation running fine on RHEL5 vm).
