Does dom0 crash, or does it shutdown cleanly? 

You might want to enable serial console for capturing the full Xen+dom0kernel 
messages:

Also:
        - are you running the latest linux-2.6.18-xen from 
http://xenbits.xen.org/linux-2.6.18-xen.hg ? 
        - Did you try updating to Xen 4.0.1-rc4 from 
http://xenbits.xen.org/xen-4.0-testing.hg
