I have my doubt because yesterday I did test stress (CPU and Read disk) on two virtual machine (Windows server 2003) , the CPU of two virtual machine  goes to 100% , the virtual machine doesn't restart and Dom0 doesn't down but I see that my server stop recognize  total memory server that is 8 GB , the server have recognized  only 4 GB. I think when server recognize 8 GB, the server be maybe unstable , because since the memory is 4 GB the server doesn't restart anymore.

Are you certain it's Xen that is crashing?
If a virtual machine is stressing the CPU too much, it might overheat and the
system crashes because of that.

I've had, in the past, serious overheating issues with computers that led to
weird errors.
When this happens next, check the temperature of the CPU and other components
in the computer.
