What you are suggesting isn't a "work around". SSH'ing directly to a Linux machine, whether virtual or not, is the general accepted way of administrating a Linux system remotely.

ssh from laptop ---> machine that runs xen ----> start ubuntu lucid vm using "xm create xen.conf" ----> login to the vm.

Now, I'm able to login to the VM. But the console is clipped at the middle section of my 15.6" screen.

However, this problem is non-existent when I open a separate ssh session directly to the vm from my laptop. using : ssh user@<vm's ip address>

And I'll reiterate that xm console is to fix your network so you can ssh into your VM. That's really all I use it for.
