If you are on Xen 4.0, you can go up to 128 cores for your guest.

During the Xen 3.x period, the VCPU limit for a guest was 32. I am not sure if the limit was upped during one of the sub releases like 3.4 etc.

 

You should know that it is not advisable to allocate more VCPUs than number of LCPUs present. You will run in to spinlock issues.
