I'm surprised this isn't working. (I'm probably just overlooking
something simple)

I would suggest to try OpenXenManager (or one of the other management tools)
http://wiki.xensource.com/xenwiki/XCP_Projects

Let us know if that doesn't help and we can debug this further.

By the way which documentation are you following?
