I have searched on the Citrix forum, and didn't find anything. I'm
afraid to ask because I've seen a number of posts where someone asks a
question about XCP and gets shut down pretty quick, because they don't
support it.

Has anyone had success doing a quiesced snapshot of Windows Server 2008
Standard x64 on XCP 1.0?

You might want to also search and ask on the Citrix XenServer forums.
XCP 1.0 is based on XenServer 5.6 FP1. Also XCP 1.1 is in beta and an
RC is expected out the end of next week. XCP 1.1 is based on XenServer
5.6 SP2.
