A week ago I did update of pool. I have pool of 5 XCP's.
My steps for update were:
1) Backup pool configuration data.
2) Migrate VM to 1 host.
3) update 1 XCP (not pool master)
4) migrate some VM to just upgraded XCP.
Two versions of XCP works fine in a pool. If you do not extremely
operations, such as creating SR.
5) Update all rest XCP excluding pool master.
6) Finally upgrade pool master.
WARNING: If you want designate new pool master you will got an error. Pool
master role can't migrate from XCP 1.0 to XCP 1.1.
So I just powered off my pool master and upgraded it. 
After booting with XCP 1.1 it worked fine.
